Abstract
การวิจัยครั้งนี้มีวัตถุประสงค์เพื่อศึกษา (1) ข้อมูลส่วนบุคคล เศรษฐกิจ สังคม ของสมาชิกวิสาหกิจชุมชนแปรรูปและผลิตภัณฑ์อาหารของจังหวัดสระบุรี (2) ระดับความรู้เกี่ยวกับการดำเนินงานวิสาหกิจชุมชน (3) ระดับความเข้มแข็งของวิสาหกิจชุมชน (4) ปัจจัยที่มีผลต่อความเข้มแข็งของวิสาหกิจชุมชน (5) ปัญหาและข้อเสนอแนะของการดำเนินงานวิสาหกิจชุมชนแปรรูปและผลิตภัณฑ์อาหารจังหวัดสระบุรี ผลการวิจัยพบว่า (1) สมาชิกวิสาหกิจชุมชนแปรรูปและผลิตภัณฑ์อาหาร ร้อยละ 76.3 เป็นเพศหญิง มีอายุเฉลี่ย 56.36 ปี ร้อยละ 38.4 มีระดับการศึกษาในระดับประถมศึกษา ร้อยละ 71.8 ประกอบอาชีพทางการเกษตรเป็นอาชีพหลัก รายได้จากการประกอบอาชีพเฉลี่ย 102,471.8 บาท/ปี รายได้จากวิสาหกิจชุมขน 27,463.28 บาท/ปี มีจำนวนแรงงานในครัวเรือนเฉลี่ย 2.99 คน มีจำนวนแรงงานที่ร่วมวิสาหกิจชุมชนเฉลี่ย 1.17 คน มีระยะเวลาการเป็นสมาชิกวิสาหกิจชุมชน 6.20 ปี (2) สมาชิกวิสาหกิจชุมชนมีความรู้ที่ได้รับจากการส่งเสริมเกี่ยวกับด้านการจัดการ ด้านการบริหาร และด้านการพัฒนาเครือข่าย อยู่ในระดับมาก โดยได้รับการส่งเสริมเกี่ยวกับวิสาหกิจชุมชนแบบรายบุคคล โดยเจ้าหน้าที่ส่งเสริมโดยการเยี่ยมกลุ่มมากที่สุด ร้อยละ 27.7 สมาชิกวิสาหกิจชุมชนมีระดับความรู้เกี่ยวกับการดำเนินงานวิสาหกิจชุมชนอยู่ในระดับปานกลาง (3) ประเด็นความเข้มแข็งของวิสาหกิจชุมชนแปรรูปและผลิตภัณฑ์อาหารของจังหวัดสระบุรี เกี่ยวกับประเด็นด้านการจัดการ ด้านการบริหาร และด้านการสนับสนุนเครือข่ายวิสาหกิจชุมชน พบว่าร้อยละ 46.3 สมาชิกวิสาหกิจชุมชนมีระดับความเข้มแข็งของวิสาหกิจชุมชนอยู่ในระดับมาก (4) ปัจจัยที่มีผลต่อความเข้มแข็งของวิสาหกิจชุมชนแปรรูปและผลิตภัณฑ์อาหารจังหวัดสระบุรี ได้แก่ รายได้จากการดำเนินงานวิสาหกิจชุมชนในความสัมพันธ์เชิงบวก และแรงงานที่ร่วมวิสาหกิจชุมชุนในความสัมพันธ์เชิงลบ ที่มีความสัมพันธ์กันอย่างมีนัยสำคัญยิ่งทางสถิติที่ระดับ 0.05 (5) ปัญหาและข้อเสนอแนะ ร้อยละ 31.1 มีปัญหาการการวางแผนกำหนดทิศทางการพัฒนาและขาดเงินทุน ขอเสนอแนะว่าควรมีส่งเสริมวิสาหกิจชุมชนให้เกิดรายได้ และวิธีการบริหารจัดการสมาชิกเพื่อพัฒนาไปสู่ความเข้มแข็งต่อไป
The objectives of this research were to study (1) personal, economic, and social data of food processing and product community enterprise, Saraburi province (2) level of knowledge about the operation of community enterprise (3) level of strength of community enterprise (4) factors affecting the strength of community enterprise (5) problems and suggestions regarding the operation of food processing product community enterprise, Saraburi province. The population of this research was 1,327 members from 79 food processing and product community enterprises in Saraburi province. The sample size of 177 people was determined by using Taro Yamane formula with the error value of 0.07 and Stratified sampling method. Data was analyzed by using statistics such as frequency, percentage, mean, minimum value, maximum value, standard deviation, ranking, and multiple regression. The results of this research showed that (1) 76.3% of food processing and products community enterprises were female with the average age of 56.36 years. 38.4% of them completed primary school education, 71.8% mainly had profession related with agriculture. The average income received from working was 102,471.8 Baht/year. The average income from community enterprise was 27,463.28 Baht/year. The average labor in the household was 2.99 people with the average labor working in the community enterprise were 1.17 people and the membership time in community enterprise at 6.20 years. (2) Community enterprise members had knowledge received from the extension on management aspect, administration aspect, and network development aspect at the high level. They received the extension about community enterprises individually with the extension officers through group visit the most. 27.7% of community enterprise members had knowledge about the operation of community enterprise at the moderate level. (3) The topic about the strength of food processing and product community enterprises of Saraburi province regarding management aspect, administration aspect, and community enterprise network support aspect showed that 46.3% of community enterprise members had the level of strength of community enterprises at the high level. (4) Factors affecting the strength of food processing and products community enterprises in Saraburi province were such as income from the operation of community enterprises in the positive relationship and labors who participated with community enterprise in the negative relationship that had the relationship at statistically significant level of 0.05. (5) Problems and suggestions: 31.1% faced with the problems about direction planning for development and lack of funding. Suggestions would be to promote community enterprise extension to create income and member management method to get to the strength point.
