Abstract
การศึกษาในครั้งนี้ มีวัตถุประสงค์เพื่อ 1) ศึกษาสภาพทั่วไปในการบริโภคอาหารนอกบ้านของผู้บริโภค 2) ศึกษาปัจจัยกำหนดอุปสงค์การบริโภคอาหารนอกบ้านของผู้บริโภค และ 3) วิเคราะห์ความยืดหยุ่นของอุปสงค์ในการใช้จ่ายการบริโภคอาหารนอกบ้านต่อรายได้ของครัวเรือนผู้บริโภคในเขตเทศบาลนครสุราษฎร์ธานี ผลการวิจัยพบว่า 1) ผู้บริโภคออกไปบริโภคอาหารนอกบ้าน เฉลี่ยสัปดาห์ละ 2-3 ครั้ง (ร้อยละ 38.4) ค่าใช้จ่ายประมาณ 200-300 บาท ต่อคน/ต่อครั้ง (ร้อยละ 38.9) ประเภทอาหารไทย (ร้อยละ65.1) ประเภทสวนอาหาร (ร้อยละ 55.9) กลุ่มอิทธิพลต่อการออกไปบริโภคมากที่สุดคือครอบครัว (ร้อยละ 71.3) การบริโภคอาหารนอกบ้านเห็นว่าไม่เป็นการประหยัดรายได้ (ร้อยละ 57.7) แต่เมื่อรายได้ของครัวเรือนเพิ่มขึ้นจะออกไปบริโภคอาหารนอกบ้านเพิ่มขึ้นเพราะเป็นการประหยัดเวลาในการทำอาหาร (ร้อยละ 48.8) ผู้ให้ข้อมูลเกี่ยวกับสถานที่คือเพื่อน (ร้อยละ 41.3) 2) การขึ้นต่อกันของประเภทอาหารกับอายุ สถานภาพสมรส และรายได้ของหัวหน้าครัวเรือนอยู่ที่ระดับนัยสำคัญ 0.01 และการขึ้นต่อกันของประเภทร้านอาหารกับ เพศ อายุ ระดับการศึกษา สถานภาพสมรส จำนวนคนในครัวเรือนที่ต้องเลี้ยงดูและรายได้ของหัวหน้าครัวเรือนอยู่ที่ระดับนัยสำคัญ 0.01 จากการวิเคราะห์ด้วยสมการถดถอยพหุคูณปัจจัยที่มีความสัมพันธ์ในทิศทางตรงกันข้ามกับจำนวนครั้งเฉลี่ยต่อสัปดาห์ของการบริโภคอาหารนอกบ้านของผู้บริโภค ได้แก่ จำนวนคนที่ต้องเลี้ยงดู และอายุของหัวหน้าครัวเรือน ที่ระดับนัยสำคัญทางสถิติที่ 0.01 และ 0.05 ตามลำดับ และ 3) ความยืดหยุ่นของอุปสงค์ในการใช้จ่ายการบริโภคอาหารนอกบ้านต่อรายได้ของหัวหน้าครัวเรือนผู้บริโภค มีค่าเท่ากับ 1.89
The research purposes were to: 1) study the general view of food consumption away from homes of consumers: 2) study factors affecting the consumers’ demand for eating outside their homes: and 3) analyze the income elasticity of demand for the expenses of food consumption away from home in the area of Surat Thani Municipality. The sample used in the study comprised 400 the heads of the families working as various careers in the area of Surat Thani municipality, Surat Thani province. The questionnaire was used as the research instrument and the statistics used to analyze the data were percentage, mean, standard deviation, Chi-square, and regression analysis. The results were as follows. 1) Consumers consumed food outside their homes, in average, about 2-3 times a week (38.4%), spent for the food about 200-300 baht per person a time (38.9%), preferred Thai food (65.1%), and chose garden restaurant (55.9%). The main influencing factor for consuming food away from their homes were their families (71.3%). Consumers considered that eating food away from homes was uneconomical (57.7%). Since they earned more, they were likely to eat food away from homes due to saving cooking time (48.8%) but some did not agree because it was uneconomical (39.4%). People recommending the restaurants were friends (41.3%). 2) The type of food eating away from home selected was depended on sex, age, marital status and the income of family’s head, at a statistical significance 0.05 level, while the type of restaurants chosen was depended on sex, age, marital status, education level, the family head’s income, and the number of family members who had been looked after, at a statistical significance 0.01 level. Concerning regression analysis, the number of family members who had been looked after, and the age of family’s heads showed negative relationships with an average weekly number of the food consumption away from home, at a statistical significance 0.01 and 0.05 levels respectively. 3) The elasticity of demand for expending food consumption away from home as considered in relation to the head of the family’s income was 1.89
