Abstract
การวิจัยนี้มีวัตถุประสงค์เพื่อ 1) ศึกษาข้อมูลทั่วไปของร้านค้าปลีกสมัยใหม่สำหรับเนื้อสัตว์ 2) ศึกษาสภาพการจัดการร้านค้าปลีกสมัยใหม่สำหรับเนื้อสัตว์ 3) ศึกษาลักษณะการซื้อสินค้าเนื้อสัตว์ 4) ศึกษาความพึงพอใจของผู้บริโภคต่อการจัดการของร้านค้าปลีกสมัยใหม่สำหรับเนื้อสัตว์ และ 5) เปรียบเทียบความพึงพอใจของผู้บริโภคต่อการจัดการของร้านค้าปลีกสมัยใหม่สำหรับเนื้อสัตว์จำแนกตามรูปแบบของร้านค้าปลีกในอำเภอเมืองสระบุรี จังหวัดสระบุรี ผลการวิจัยพบว่า 1) ร้านค้าปลีกสมัยใหม่สำหรับเนื้อสัตว์มีระยะเวลาการเปิดให้บริการมาแล้วโดยเฉลี่ย 6 ปี ระยะเวลาเปิดร้านตั้งแต่ 9-24 ชั่วโมงต่อวัน และใช้พนักงานจำนวนน้อย 2) สภาพการจัดการร้านค้าปลีกสมัยใหม่สำหรับเนื้อสัตว์ในภาพรวมมีความคล้ายคลึงกัน เน้นการจัดสินค้าเป็นหมวดหมู่ และมีส่วนประสมผลิตภัณฑ์สำหรับเนื้อสัตว์หลายรูปแบบ 3) ลักษณะการซื้อสินค้าเนื้อสัตว์คือผู้บริโภคเข้ามาเลือกดูสินค้าแล้วจึงตัดสินใจซื้อ ส่วนใหญ่มีความถี่ในการซื้อสินค้าเนื้อสัตว์ 1-3 ครั้งต่อเดือน จำนวนเงินที่ซื้อสินค้าเนื้อสัตว์101-200 บาทต่อครั้ง และซื้อสินค้าช่วงเย็นเวลา 16.01-19.00 น. 4) ความพึงพอใจของผู้บริโภคโดยรวมต่อการจัดการของร้านค้าปลีก 6 ด้าน พบว่า ด้านการกำหนดสถานที่ตั้งร้านค้าปลีก ด้านการกำหนดส่วนประสมผลิตภัณฑ์สำหรับเนื้อสัตว์ ด้านการกำหนดราคา และด้านการออกแบบร้านค้าปลีกและการจัดวางสินค้า ความพึงพอใจโดยรวมอยู่ในระดับมาก ส่วนด้านการสื่อสารของร้านค้าปลีกและด้านการให้บริการลูกค้ามีความพึงพอใจโดยรวมอยู่ในระดับปานกลาง และ 5) การเปรียบเทียบความพึงพอใจของผู้บริโภคต่อการจัดการของร้านค้าปลีกด้านต่าง ๆ 4 รูปแบบ พบว่า มีความแตกต่างอย่างมีนัยสำคัญทางสถิติที่ระดับ 0.05 ในปัจจัยย่อยทุกปัจจัยใน 5 ด้านยกเว้นด้านการออกแบบร้านค้าปลีกและการจัดวางสินค้าใน 2 ปัจจัยย่อยคือปัจจัยอุณหภูมิในร้านค้าเย็นสบายและปัจจัยร้านค้ามีความโปร่งสบาย ไม่คับแคบ พบว่า ไม่แตกต่างกันอย่างมีนัยสำคัญทางสถิติที่ระดับ 0.05
The objectives of this research were 1) to study general information about modern retail stores selling meat in Mueang Saraburi District, Saraburi Province, 2) to study the condition of management of those stores, 3) to study the purchasing characteristics of consumers buying meat at those stores, 4) to study consumer satisfaction with the store management, and 5) to compare consumer satisfaction with the store management for different types of modern retail stores selling meat in Mueang Saraburi District, Saraburi Province. This research was mixed-methods research. Qualitative research used in-depth interviews with 8 representatives from 4 types of modern retail stores selling meat, namely 1) supermarkets that bought meat products from another company; 2) convenience stores that bought meat products from an affiliated company; 3) convenience stores that bought meat products from another company; and 4) specialty stores specializing in meat and meat products. Content analysis was applied to qualitative data. For quantitative research, the study population was consumers aged 15 years and over who had purchased meat products from these four types of modern retail stores for meat. Data from the Department of Provincial Administration as of December 2020 indicated that Mueang Saraburi District had a population of 38,979 people aged 15 years and over, and sample size was determined by using Taro Yamane formula at 6% error, leading to a minimum sample size of 276 people. Data were collected by questionnaires from a sample group of 280 consumers, 70 from each of the 4 types of retail stores, obtained from purposive sampling. The statistics used to analyze the data were frequency, percentage, mean, standard deviation, one-way ANOVA, and paired comparison of Scheffe's Method. The results showed that 1) the modern retail stores selling meat studied had been operating for an average of 6 years, with opening times from 9-24 hours a day and employed a few employees only. 2) The conditions of the modern retail stores’ management were similar, focusing on categorization and product mix for various types of meat. 3) The purchasing habits of most consumers when buying meat products were to go and look at the products and then decide on whether to buy them or not. Most of them purchased meat products at the frequency of 1-3 times a month. The average amount of money spent for meat products was 101-200 baht per time and buying time was most often in the evening at 16.01-19.00 PM. 4) When consumers were asked about their overall satisfaction with retail store management in 6 aspects, the results revealed that their satisfaction with retail store location, determination of product mix for meat products, pricing, retail store design and product placement were generally at a high level, while their satisfaction with retail communication and customer service were at a moderate level. 5) Comparison of consumer satisfaction with the management of the 4 different retail store types revealed that there were statistically significant differences at the 0.05 level in all sub-factors in 5 aspects, with the exception of the retail store design and product placement aspect-there were no statistically significant differences at the 0.05 level for 2 sub-factors, namely, the “temperature in the store was cool and comfortable”, and “the store was airy and not too cramped.
