Abstract
การวิจัยเชิงสำรวจครั้งนี้ มีวัตถุประสงค์เพื่อ (1) ศึกษาข้อมูลพื้นฐานส่วนบุคคล ความรู้เกี่ยวกับอาหารและโภชนาการและการจัดการอาหารผู้สูงอายุ (2) เปรียบเทียบความรู้เกี่ยวกับอาหารและโภชนาการและการจัดการอาหารผู้สูงอายุและ (3) ศึกษาความสัมพันธ์ระหว่างความรู้เกี่ยวกับอาหารและโภชนาการกับการจัดการอาหารผู้สูงอายุในชุมชนเมืองและชนบท จังหวัดเชียงใหม่ กลุ่มตัวอย่างคือ ผู้สูงอายุตั้งแต่ 60 ปีขึ้นไป จำนวน 318 คน จากประชากรผู้สูงอายุชุมชนเมืองที่อาศัยอยู่ในชุมชนข่วงสิงห์พัฒนา และชุมชนบ้านท่อ แขวงนครพิงค์ เทศบาลนครเชียงใหม่ และชุมชนชนบทที่อาศัยในตำบลบ้านเป้า อำเภอแม่แตง จังหวัดเชียงใหม่ รวมทั้งสิ้น 1,534 รายการ เก็บข้อมูลโดยใช้แบบสัมภาษณ์สถิติที่นำมาใช้ในการวิเคราะห์ข้อมูล ได้แก่ ค่าความถี่ ร้อยละ ค่าเฉลี่ย ส่วนเบี่ยงเบนมาตรฐาน สถิติที และสถิติสัมประสิทธิ์สหสัมพันธ์ ผลการวิจัยพบว่า ข้อมูลพื้นฐานส่วนบุคคลของผู้สูงอายุในชุมชนเมืองและในชนบทตามลำดับดังนี้ เป็นเพศหญิง (ร้อยละ 63.1 และ 58.2) มีอายุอยู่ในช่วงระหว่าง 60-69 ปี (ร้อยละ 63.8 และ 62.0) สถานภาพสมรส (ร้อยละ 49.4 และ 60.1) ส่วนใหญ่จะอาศัยอยู่กับบุตรหลาน/ญาติพี่น้อง (ร้อยละ 50.6และ 27.8) อยู่กับคู่สมรส (ร้อยละ 41.9 และ 57.6) ระดับการศึกษาจบประถมศึกษา (ร้อยละ 58.8 และ76.6) ส่วนมากมีอาชีพค้าขาย/ธุรกิจส่วนตัว (ร้อยละ 36.2 และ15.8) อาชีพเกษตรกร (ร้อยละ 6.9 และร้อยละ 36.7) รายได้ต่อเดือนในครัวเรือนส่วนใหญ่อยู่ช่วงระหว่าง 10,001-15,000 บาท/เดือน (ร้อยละ31.2 และ 7.6) ผู้สูงอายุทั้งชุมชนในเมืองและชุมชนชนบทมีระดับความรู้เกี่ยวกับอาหารและโภชนาการเฉลี่ยอยู่ในระดับมาก (1.80 ±0.21 และ 1.75 ±0.28) ตามลำดับ โดยไม่มีความแตกต่างกันอย่างมีนัยสำคัญทางสถิติ การเปรียบเทียบการจัดการอาหารของผู้สูงอายุในชุมชนเมืองและชุมชนชนบท พบว่ามีความการจัดการอาหารของผู้สูงอายุ ในชุมชนชนบทมีคะแนนเฉลี่ยสูงกว่าชุมชนเมืองอย่างมี แตกต่างกัน โดยนัยสำคัญทางสถิติ (t=2.68, df=316.0, p<0.01) ความรู้เกี่ยวกับอาหารและโภชนาการมีความสัมพันธ์กับการจัดการอาหารของผู้สูงอายุในทิศทางความสัมพันธ์เดียวกันอย่างมีนัยสำคัญทางสถิติที่ระดับความสัมพันธ์น้อย (r=0.293, <0.01)
This survey research aims to 1) study socioeconomic characteristics, knowledge on food and nutrition, and food management for the elderly, 2) compare the differences of food and nutrition, and food management among the elderly, and 3) study associations between food and nutrition knowledge and food management among the elderly in urban and rural areas, Chiang Mai Province. The study sample were 318 elderly aged 60 years and up from 1,534 populations in Chiang mai province who lived in two urban areas in Nakornping district, Chiang Mai Municipal (Khuang Singh Pattana and Bantoe communities) and one rural area in Mae tang sub district (Ban pao community). Questionnaires were used to collect data. Data analysis used in this research are frequency, means, standard diviation, T-Test and correlations. The results showed that socioeconomic characteristics of the elderly in the urban and rural areas were as follow respectively : most were females (63.1 and 58.2%); aged between 60-69 years (63.8 and 62.0%); lived with children Grandchildren/relatives (50.6% and 27.8%) lived with their spouses (41.9% and 57.6%); primary school education (58.8% and 76.6%), self-employed/businesses (36.2% and 15.8%); agriculture (6.9% and 36.7%) ; monthy income between 10,001-15,000 baht (31.2% and 7.6%). The elderly in both urban and rural areas had an average score of knowledge about food and nutrition at a high level (1.80 ± 0.21 and 1.75 ± 0.28) respectively with no statistical difference. Food management comparison between urban and rural elderlies found that rural peers had an average score statistically significantly higher than urban counterparts. Correlation between knowledge on food and nutrition with overall food management was statistically significant at a low level of relationship (r = 0.29, p < 0.01)
