การวิจัยนี้ มีวัตถุประสงค์เพื่อศึกษา (1) สภาพพื้นฐานทางเศรษฐกิจและสังคมของสมาชิกกลุ่มแม่บ้านเกษตรกร (2) กระบวนการผลิตเครื่องแกงตามมาตรฐานการผลิตขั้นต้น ของกลุ่มแม่บ้านเกษตรกร (3) การผลิตเครื่องแกงให้ได้ตามมาตรฐานสินค้าเกษตรของกลุ่มแม่บ้านเกษตรกร (4) การปฏิบัติตามมาตรฐานบรรจุภัณฑ์เครื่องแกงของกลุ่มแม่บ้านเกษตรกร (5) ปัญหาและความต้องการของกลุ่มแม่บ้านเกษตรกรในการส่งเสริมและการพัฒนาการผลิตเครื่องแกงให้ได้ตามมาตรฐานอาหารปลอดภัย ประชากรที่ใช้ในการศึกษา คือ สมาชิกกลุ่มแม่บ้านเกษตรกรผู้ผลิตเครื่องแกงในอำเภอถ้ำพรรณรา จังหวัดนครศรีธรรมราช 8 กลุ่ม จำนวน 184 คน คำนวณขนาดกลุ่มตัวอย่างโดยใช้สูตรของทาโร่ ยามาเน่ ที่ค่าความคลาดเคลื่อน 0.05 ได้จำนวน 136 คน การเก็บรวบรวมข้อมูลโดยใช้แบบสัมภาษณ์แบบมีโครงสร้าง สถิติที่ใช้ ได้แก่ ค่าความถี่ ค่าร้อยละ ค่าเฉลี่ย ส่วนเบี่ยงเบนมาตรฐาน และการทดสอบความแปรปรวน ผลการวิจัยพบว่า (1) สมาชิกกลุ่มแม่บ้านเกษตรกรอายุเฉลี่ย 53.98 ปี จบชั้นประถมศึกษา ประกอบอาชีพการเกษตรคือการผลิตพืช ระยะเวลาที่เข้าเป็นสมาชิกกลุ่มเฉลี่ย 4.48 ปี รายได้จากการเป็นสมาชิกกลุ่มเฉลี่ย 1,902.54 บาทต่อปีต่อครัวเรือน การได้รับความรู้เกี่ยวกับวิธีการผลิตเครื่องแกงจากเจ้าหน้าที่ส่งเสริมการเกษตรและจากข้อมูลจากอินเทอร์เน็ต (2) กลุ่มแม่บ้านเกษตรกรเกือบทั้งหมดปฏิบัติตามมาตรฐานการผลิตขั้นต้นทุกข้อทุกครั้ง (3) การผลิตเครื่องแกงให้ได้ตามมาตรฐานสินค้าเกษตรของกลุ่มแม่บ้านเกษตรกร คุณลักษณะที่ต้องการและการบรรจุ มีการปฏิบัติตามมาตรฐานทุกครั้ง ส่วนเครื่องหมายการค้าและฉลากยังมีบางกลุ่มไม่ปฏิบัติตามมาตรฐาน (4) กลุ่มแม่บ้านเกษตรกรมีการปฏิบัติตามมาตรฐานบรรจุภัณฑ์ทุกครั้ง และ (5) ปัญหาของกลุ่มแม่บ้านเกษตรกรในการผลิตเครื่องแกงให้ได้ตามมาตรฐานอาหารปลอดภัยอยู่ในระดับปานกลาง ส่วนปัญหาด้านอื่นๆ อยู่ในระดับน้อย สำหรับความต้องการของกลุ่มแม่บ้านเกษตรกรในการผลิตเครื่องแกงให้ได้ตามมาตรฐานสินค้าเกษตรอยู่ในระดับมาก มาตรฐานการผลิตขั้นต้น และมาตรฐานบรรจุภัณฑ์อยู่ในระดับปานกลาง กลุ่มแม่บ้านเกษตรกรมีความแตกต่างกันอย่างมีนัยสำคัญทางสถิติที่ระดับ 0.05 ในการปฏิบัติตามเกณฑ์มาตรฐานต่างๆ และสามารถสรุปได้ว่า กลุ่มแม่บ้านเกษตรกรมีความพร้อมเพื่อขอรับรองมาตรฐานอาหารปลอดภัยจำนวน 3 กลุ่มจาก 8 กลุ่ม
The objectives of this research were to study: (1) basic socio-economic background of farm women group members, (2) curry paste production process according to Primary GMP by farm women groups, (3) curry paste production according to the standardization of agricultural product by farm women groups, (4) the packaging according to standardization by farm women groups, and (5) the problems and needs of farm women groups in an extension and development of curry paste production according to food safety standardization. The population in this study were 184 members of eight farm women groups in Tham Phannara District, Nakhon Si Thammarat Province, 136 samples were determined by using Taro Yamane’s formula with an error of 0.05 and interviewed by a structural interview questionnaire. Statistics used were frequency, percentage, mean, standard deviation, and analysis of variance. The research results were as follows: (1) farm women group members had an average age of 53.98 years, finished primary education, and had crop production as an agricultural occupation. They had been members of the group for an average of 4.48 years and earned income from the group with an average of 1,902.54 baht annually per household. They gained knowledge of curry production methods from agricultural extension workers and data from the internet. (2) Almost all of farm women groups had practiced in curry paste production according to every items of Primary GMP consistently. (3) The standardization of agricultural product by farm women groups were consistently followed to meet the standard target quality and packaging; however, trade mark brand and label standards were not followed by some groups. (4) The farm women groups followed packaging standardization consistently. In addition, (5) the problem in meeting the food safety standardization for the quality of curry production was at moderate level while other problems were at a low level. The needs to keep the quality of curry production up to food safety standardization were at a high level while the primary GMP and packaging standardization were at moderate level. A significant difference in keeping up the standard practices among farm women groups was at 0.05. Three out of eight farm women groups were qualified for approval of food safety standardization
