การพัฒนาชุดการสอนแผนจุฬา วิชางานถนอมอาหาร เรื่องความรู้ทั่วไปเกี่ยวกับการถนอมอาหาร สำหรับนักเรียนชั้นมัธยมศึกษาปีที่ 6 โรงเรียนคีรีมาศพิทยาคม จังหวัดสุโขทัย

Abstract

การวิจัยครั้งนี้มีจุดประสงค์เพื่อ (1) พัฒนาชุดการสอนแผนจุฬา วิชางานถนอมอาหาร เรื่องความรู้ทั่วไปเกี่ยวกับการถนอมอาหาร สำหรับนักเรียนชั้นมัธยมศึกษาปีที่ 6 โรงเรียนคีรีมาศพิทยาคม จังหวัดสุโขทัย ให้มีประสิทธิภาพตามเกณฑ์ (2) ศึกษาความก้าวหน้าของนักเรียนที่เรียนด้วยชุดการสอนแผนจุฬา และ (3) ศึกษาความพึงพอใจของนักเรียนที่มีต่อชุดการสอนแผนจุฬา กลุ่มตัวอย่าง คือ นักเรียนชั้นมัธยมศึกษาปีที่ 6 โรงเรียนคีรีมาศพิทยาคม จังหวัดสุโขทัย ที่กำลังศึกษาอยู่ในภาคเรียนที่ 1 ปีการศึกษา 2557 จำนวน 39 คน ได้มาโดยการสุ่มแบบกลุ่ม เครื่องมือที่ใช้ในการวิจัยประกอบด้วย (1) ชุดการสอนแผนจุฬาวิชางานถนอมอาหาร เรื่องความรู้ทั่วไปเกี่ยวกับการถนอมอาหาร (2) แบบทดสอบก่อนเรียนและหลังเรียนแบบคู่ขนาน และ (3) แบบสอบถามความพึงพอใจของนักเรียนที่มีต่อชุดการสอนแผนจุฬา สถิติใช้ไนการวิเคราะห์ข้อมูล ได้แก่ ค่าประสิทธิภาพ E1/E2 ค่าเฉลี่ย ส่วนเบี่ยงเบนมาตรฐาน และการทดสอบค่าที ผลการวิจัยปรากฏว่า (1) ชุดการสอนแผนจุฬา ที่ผลิตขึ้นมีประสิทธิภาพ 81.18/82.00 เป็นไปตามเกณฑ์ 80/80 (2) นักเรียนที่เรียนด้วยชุดการสอนแผนจุฬามีความก้าวหน้าทางการเรียน สูงขึ้นอย่างมีนัยสำคัญทางสถิติที่ระดับ .05 และ (3) นักเรียนมีความพึงพอใจต่อชุดการสอนแผนจุฬาอยู่ในระดับมาก

The objectives of this research were (1) to develop a Chula Plan instructional package in the Food Preservation Course on the topic of General Knowledge of Food Preservation for Mathayom Suksa VI students at Khirimat Phitthayakhom School in Sukhothai province based on the set efficiency criterion; (2) to study the learning progress of students who learned from the Chula Plan instructional package; and (3) to study the students’ satisfaction with the Chula Plan instructional package. The research sample consisted of 39 Mathayom Suksa VI students studying during the first semester of the 2014 academic year at Khirimat Phitthayakhom School in Sukhothai province, obtained by cluster sampling. The employed research instruments comprised (1) a Chula Plan instructional package in the Food Preservation Course on the topic of General Knowledge of Food Preservation; (2) two parallel forms of an achievement test for pre-testing and post-testing; and (3) a questionnaire on student’s satisfaction with the Chula Plan instructional package. Statistics employed for data analysis were the E1/E2 efficiency index, mean, standard deviation, and t-test. Resarch findings showed that (1) the developed Chula Plan instructional package was efficient at 81.18/82.00, thus meeting the set 80/80 efficiency criterion; (2) the students learning from the Chula Plan instructional package achieved learning progress significantly at the .05 level; and (3) the students’ satisfaction with the Chula Plan instructional package was at the high level.
