การแปรรูปและการส่งออกผลิตภัณฑ์ผักและผลไม้บรรจุกระป๋อง : กรณีศึกษา บริษัท อาหารภาคเหนือ จำกัด

Abstract

การศึกษาครั้งนี้มีวัตถุประสงค์ (1) เพื่อศึกษาขั้นตอนและปัญหาของการแปรรูปผัก และผลไม้เบรรจุกระป๋องของบริษัท อาหารภาคเหนือ จำกัด (2) เพื่อศึกษาขั้นตอนและปัญหาการส่งออกผลิตภัณฑ์ผัก และผลไม้บรรจุกระป๋องของบริษัท อาหารภาคเหนือ จำกัด และ (3) เพื่อเสนอแนะแนวทางปรับปรุง แก้ไขปัญหาในการดำเนินงานการแปรรูปและส่งออกผลิตภัณฑ์ผัก และผลไม้บรรจุกระป๋องแก่ธุรกิจที่ดำเนินงานประเภทเดียวกัน การศึกษานี้เป็นการวิจัยเชิงปริมาณ เครื่องมือที่ใช้ในการรวบรวมข้อมูลได้แก่ แบบสอบถามและข้อมูลที่เกี่ยวข้องจากเอกสารทางวิชาการของสำนักงานเศรษฐกิจการเกษตร กระทรวงเกษตรและสหกรณ์ กรมศุลกากร กระทรวงการคลัง กรมส่งเสริมการค้าระหว่างประเทศ กระทรวงพาณิชย์ และกระทรวงสาธารณสุข โดยอาศัยข้อมูลในอดีตช่วงปี พ.ศ. 2554 - 2556 ส่วนสถิติที่ใช้ในการวิเคราะห์ข้อมูล ได้แก่ ค่า เฉลี่ย ผลการศึกษาประกอบด้วย (1) ผลการศึกษาด้านการแปรรูปพบว่า ผลการประเมินความสอดคล้องการดำ เนินงานตามหลักเกณฑ์ GMP โดยรวมมีระดับความสอดคล้องมาก (ค่าเฉลี่ย 3.36) และผลการประเมินระดับปัญหาและอุปสรรคโดยรวมมีระดับปัญหาและอุปสรรคค่อนข้างน้อย (ค่าเฉลี่ย 2.11) (2) ผลการศึกษาด้านการส่งออกพบว่า ผลการดำเนินงานขั้นตอนการส่งออกโดยรวมมีระดับความสอดคล้องมาก (ค่าเฉลี่ย 4.00) และผลการประเมินปัญหาและอุปสรรคโดยรวมมีระดับ ปัญหาและอุปสรรคค่อนข้างน้อย (ค่าเฉลี่ย 2.18) (3) จาการศึกษาครั้งนี้ได้เสนอแนะการดำเนินงานด้านการจัดการวัตถุดิบและการเพิ่มประสิทธิภาพการดำเนินงานโดยใช้หลักการการบำรุงรักษาทวีผลแบบทุกคนมีส่วนร่วม (TPM) เพื่อเป็แนวทางในการปรับปรุง แก้ไขปัญหา และเพิ่มประสิทธิภาพการดำเนินงานของธุรกิจที่ประกอบกิจการประเภทเดียวกัน

The objectives of this research were (1) to study the procedure and problems related to the processing of canned fruits and vegetables by Northern Food Co., Ltd.; (2) to study the procedure and problems related to the export of canned fruit and vegetable products by Northern Food Co., Ltd.; and (3) to form recommendations for improving the efficiency and solving the problems of canned fruit and vegetable processing and exporting for application by other enterprises in the same industry. The study was quantitative research. The data were collected by using a questionnaire and additional data from the past three years (2011-2013) were obtained from the Office of Agricultural Economics (Ministry of Agriculture and Cooperatives), the Customs Department (Ministry of Finance), the Department of International Trade Promotion (Ministry of Commerce) and the Ministry of Public Health. Statistical analysis was done using arithmetic mean. The results showed that (1) according to good manufacturing practice (GMP) criteria assessment, the accordance level was high (X¯ = 3.36) and the problem/obstacle level from evaluation of food processing aspects was assessed as rather low (X¯ = 2.11). (2) The exporting evaluation results showed high accordance level (X¯ = 4.00) and low problem level (X¯ = 2.18). (3) From the research results, the suggested guidelines for improving the efficiency and solving the problems in the processing and export of canned fruit and vegetable products were to implement more comprehensive raw materials management and to apply the total productive maintenance (TPM) principle.
